Valentine, originally from Ontario, CA, moved to Tenino, WA during high school. Val remembers being infatuated with cooking as a child, and would often help his Grandma in the kitchen. Motivated and ready to start his passion, he enrolled into culinary school at the age of 16 at South Puget Sound Community College.

He began working banquets, events, and even wine pairing dinners while still in school. Confit Duck Tacos are his favorite dish, but he believes he excels at cooking ribs. His spicy sauce is a concoction of cioppino sauce, (which was an accident the first time he made it) and his own secret blend of spices that make for an out-of-this-world flavor!

When we say Val is passionate about his creations, a great example would be his initiative to source local ingredients. He believes in quality, and knows that’s what he receives when sourcing from local farms. He also believes in supporting local farmers and businesses in an effort to support our community.

Val’s passion for his work goes hand in hand with Riverside’s core values and mission; to provide a comfortable and welcoming environment for everyone. His support system from other Riverside team members allows him to have full creative freedom in the kitchen, all while having a beautiful view of the golf course.

When asked what’s one thing you can’t live without in the kitchen, Val quickly responded, “towels”. “Interesting choice”, said the interviewer, “why towels?”

“You use them for everything! You use them to clean, you use them to sanitize, to carry hot things, you need towels in a kitchen. If you don’t have towels, you’ll quickly realize how important they are” says Val.
